- Firm tofu - 200 grams
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Red onion - 1 small, finely chopped
- Fresh mint leaves - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Chili flakes - 1 teaspoon
- Garlic - 2 cloves, minced
- Cooked jasmine rice - 1/2 cup
- Lettuce leaves (butter or romaine) - 6 large leaves
- Peanut or sesame oil - 1 tablespoon
- Crushed peanuts - 2 tablespoons (for garnish)
Steps
- Press the tofu to remove excess moisture, then cut it into small cubes.
- In a bowl, combine soy sauce, lime juice, and chili flakes. Add the tofu cubes and marinate for 10 minutes.
- Heat the peanut or sesame oil in a non-stick pan over medium heat. Add the marinated tofu and cook for about 5-7 minutes, stirring occasionally until golden brown.
- Add the minced garlic, chopped red onion, mint, cilantro, and cooked jasmine rice to the pan. Stir well and cook for an additional 3-4 minutes until the mixture is heated through.
- Remove the pan from heat and let the filling cool slightly.
- To serve, spoon the tofu mixture into the center of each lettuce leaf, fold the sides over the filling, and enjoy as a wrap. Garnish with crushed peanuts.
