Ingredients

  • Fresh fish fillet (e.g., tilapia or snapper) - 200 grams
  • Lime juice - 3 tablespoons
  • Fish sauce - 2 tablespoons
  • Shallots - 2, finely sliced
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Chili flakes - 1 teaspoon
  • Roasted rice powder - 1 tablespoon
  • Cucumber - 1, thinly sliced
  • Lettuce leaves - 4, for serving
  • Spring onions - 2, chopped

Steps

  1. Begin by poaching the fresh fish fillet in simmering water for about 10 minutes, or until fully cooked. Remove from water and let it cool before flaking it into bite-sized pieces.
  2. In a large mixing bowl, combine the lime juice, fish sauce, shallots, chili flakes, and roasted rice powder. Mix well to create the dressing.
  3. Add the flaked fish, chopped mint, cilantro, and spring onions to the bowl. Gently toss to ensure the fish is well coated with the dressing.
  4. Taste and adjust seasoning if necessary, adding more lime juice or fish sauce according to preference.
  5. To serve, place a few lettuce leaves on each plate and top with the larb pla mixture. Garnish with additional mint leaves if desired.
  6. Serve immediately with sliced cucumber on the side.
