- Pizza dough - 1 pre-made (about 250g)
- Tofu - 200g, crumbled
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh mint leaves - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Chili flakes - 1 teaspoon (adjust to taste)
- Peanut butter - 1 tablespoon
- Olive oil - 1 tablespoon
- Bell pepper - 1/2, thinly sliced
- Carrot - 1 small, julienned
- Cucumber - 1/2, thinly sliced for garnish
- Sesame seeds - 1 tablespoon for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a skillet, heat olive oil over medium heat. Add minced garlic and chopped red onion, and sauté until the onion is translucent, about 3 minutes.
- Add crumbled tofu to the skillet and cook for another 5 minutes until it starts to brown slightly.
- Stir in soy sauce, lime juice, chili flakes, and peanut butter. Cook for an additional 2 minutes, mixing well to combine all ingredients.
- Remove the skillet from heat and fold in chopped mint and cilantro, mixing well.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
- Spread the tofu larb mixture evenly over the pizza dough, leaving a small border around the edges.
- Top with sliced bell pepper and julienned carrot.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
- Remove from the oven and let cool for a minute before slicing. Garnish with sliced cucumber and sesame seeds before serving.
