Ingredients
- Textured vegetable protein (TVP) - 100 grams
- Vegetable broth - 250 ml
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Red onion - 1 small, finely chopped
- Fresh mint leaves - 20 grams, chopped
- Fresh cilantro - 20 grams, chopped
- Thai bird's eye chili - 1, finely sliced (optional)
- Roasted rice powder - 1 tablespoon
- Salt - to taste
- Lettuce leaves - for serving
Steps
- In a small saucepan, bring the vegetable broth to a boil and add the textured vegetable protein (TVP). Reduce heat and simmer for 10 minutes until the TVP has absorbed the broth.
- Remove the TVP from heat and let it cool slightly. Then, squeeze out any excess liquid and transfer it to a mixing bowl.
- Add lime juice, soy sauce, brown sugar, and salt to the TVP. Mix well to combine.
- In the same bowl, add the chopped red onion, mint, cilantro, and bird's eye chili (if using). Stir until all the ingredients are evenly mixed.
- Sprinkle the roasted rice powder over the mixture and gently fold it in to add texture.
- Serve the Larb Ped Jay in lettuce leaves for a fresh wrap or as a side dish.
