- Soy sauce - 1 tablespoon
- Chili flakes - 1 teaspoon
- Fresh mint leaves - 1/4 cup, chopped
- Cilantro leaves - 1/4 cup, chopped
- Green onions - 2, finely sliced
- Red onion - 1/4, finely chopped
- Lemongrass - 1 stalk, finely minced
- Garlic - 2 cloves, minced
- Cucumber - 1/2, diced
- Thai bird's eye chili - 1, finely sliced (optional for extra heat)
- Romaine lettuce leaves - 4 for serving
Steps
- In a frying pan over medium heat, add the vegan minced seafood and cook for about 5-7 minutes until heated through and slightly crispy.
- In a mixing bowl, combine lime juice, soy sauce, and chili flakes to create the dressing.
- Add the cooked vegan seafood to the bowl with the dressing along with the chopped mint, cilantro, green onions, red onion, lemongrass, garlic, cucumber, and bird's eye chili (if using).
- Toss everything together until well combined and adjust seasoning if necessary.
- Serve the larb in romaine lettuce leaves as wraps, garnished with additional herbs if desired.
