Ingredients

  • Vegan minced seafood (like soy-based or konjac-based) - 200 grams
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Fresh mint leaves - 1/4 cup, chopped
  • Cilantro leaves - 1/4 cup, chopped
  • Green onions - 2, finely sliced
  • Red onion - 1/4, finely chopped
  • Lemongrass - 1 stalk, finely minced
  • Garlic - 2 cloves, minced
  • Cucumber - 1/2, diced
  • Thai bird's eye chili - 1, finely sliced (optional for extra heat)
  • Romaine lettuce leaves - 4 for serving

Steps

  1. In a frying pan over medium heat, add the vegan minced seafood and cook for about 5-7 minutes until heated through and slightly crispy.
  2. In a mixing bowl, combine lime juice, soy sauce, and chili flakes to create the dressing.
  3. Add the cooked vegan seafood to the bowl with the dressing along with the chopped mint, cilantro, green onions, red onion, lemongrass, garlic, cucumber, and bird's eye chili (if using).
  4. Toss everything together until well combined and adjust seasoning if necessary.
  5. Serve the larb in romaine lettuce leaves as wraps, garnished with additional herbs if desired.
