Ingredients

  • Zucchini noodles - 200 grams
  • Minced pork - 150 grams
  • Shallots - 2, thinly sliced
  • Fresh mint leaves - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Roasted rice powder - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cucumber - 100 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Peanut oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Heat the peanut oil in a frying pan over medium heat. Add the minced garlic and shallots, sautéing until fragrant and the shallots are translucent.
  2. Add the minced pork to the pan, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
  3. Stir in the fish sauce, lime juice, chili flakes, and roasted rice powder. Mix well and remove from heat. Let it cool slightly.
  4. In a large bowl, combine the zucchini noodles, cucumber slices, cherry tomatoes, mint, and cilantro.
  5. Add the cooked pork mixture to the salad and toss gently to combine. Season with salt to taste.
  6. Serve immediately, garnished with additional mint or cilantro if desired.
