- Minced pork - 150 grams

- Fresh mint leaves - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Chili flakes - 1 teaspoon
- Roasted rice powder - 1 tablespoon
- Garlic - 2 cloves, minced
- Cucumber - 100 grams, thinly sliced
- Cherry tomatoes - 100 grams, halved
- Peanut oil - 1 tablespoon
- Salt - to taste
Steps
- Heat the peanut oil in a frying pan over medium heat. Add the minced garlic and shallots, sautéing until fragrant and the shallots are translucent.
- Add the minced pork to the pan, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
- Stir in the fish sauce, lime juice, chili flakes, and roasted rice powder. Mix well and remove from heat. Let it cool slightly.
- In a large bowl, combine the zucchini noodles, cucumber slices, cherry tomatoes, mint, and cilantro.
- Add the cooked pork mixture to the salad and toss gently to combine. Season with salt to taste.
- Serve immediately, garnished with additional mint or cilantro if desired.
