- Ground pork - 300 grams
- Shirataki noodles - 200 grams
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Chili flakes - 1 teaspoon
- Garlic - 2 cloves, minced
- Shallot - 1 small, finely sliced
- Fresh mint leaves - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Green onions - 2, sliced
- Roasted peanuts - 2 tablespoons, chopped (optional)
- Lettuce leaves - for serving
Steps
- Start by rinsing the Shirataki noodles under cold water. Drain and set aside.
- In a skillet over medium heat, add the ground pork and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
- Add minced garlic, sliced shallot, and chili flakes to the skillet. Cook for another 2-3 minutes until fragrant.
- Stir in the fish sauce and lime juice, mixing well to combine. Cook for an additional 2 minutes.
- Remove the skillet from heat and fold in the chopped mint and cilantro.
- In a separate pot, bring water to a boil and add the Shirataki noodles. Cook for 2-3 minutes, then drain and rinse again.
- To serve, place a layer of lettuce leaves in a bowl, add a portion of the Shirataki noodles, and top with the Larb Moo mixture. Garnish with sliced green onions and chopped peanuts if desired.
