Ingredients

  • Ground pork - 300 grams
  • Shirataki noodles - 200 grams
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Shallot - 1 small, finely sliced
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Green onions - 2, sliced
  • Roasted peanuts - 2 tablespoons, chopped (optional)
  • Lettuce leaves - for serving

Steps

  1. Start by rinsing the Shirataki noodles under cold water. Drain and set aside.
  2. In a skillet over medium heat, add the ground pork and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
  3. Add minced garlic, sliced shallot, and chili flakes to the skillet. Cook for another 2-3 minutes until fragrant.
  4. Stir in the fish sauce and lime juice, mixing well to combine. Cook for an additional 2 minutes.
  5. Remove the skillet from heat and fold in the chopped mint and cilantro.
  6. In a separate pot, bring water to a boil and add the Shirataki noodles. Cook for 2-3 minutes, then drain and rinse again.
