- Fresh cilantro - 20 grams, chopped
- Thai bird's eye chili - 1, finely chopped (adjust to taste)
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Rice powder - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
Steps
- Heat vegetable oil in a pan over medium heat.
- Add the shallots and cook until translucent, about 3-4 minutes.
- Stir in the chopped shiitake mushrooms and crumbled tofu, cooking for another 5-7 minutes until the mushrooms are tender.
- Add the minced lemongrass and bird's eye chili, cooking for an additional 2 minutes.
- Remove from heat and let the mixture cool slightly.
- In a mixing bowl, combine the lime juice, soy sauce, rice powder, fresh mint, and cilantro.
- Add the mushroom-tofu mixture to the bowl and mix well to combine, adjusting salt to taste.
- Serve at room temperature or chilled, garnished with additional herbs if desired.
