  • Shiitake mushrooms - 200 grams, finely chopped
  • Firm tofu - 100 grams, crumbled
  • Shallots - 2, finely sliced
  • Lemongrass - 1 stalk, finely minced
  • Fresh mint leaves - 20 grams, chopped
  • Fresh cilantro - 20 grams, chopped
  • Thai bird's eye chili - 1, finely chopped (adjust to taste)
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice powder - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Heat vegetable oil in a pan over medium heat.
  2. Add the shallots and cook until translucent, about 3-4 minutes.
  3. Stir in the chopped shiitake mushrooms and crumbled tofu, cooking for another 5-7 minutes until the mushrooms are tender.
  4. Add the minced lemongrass and bird's eye chili, cooking for an additional 2 minutes.
  5. Remove from heat and let the mixture cool slightly.
  6. In a mixing bowl, combine the lime juice, soy sauce, rice powder, fresh mint, and cilantro.
  7. Add the mushroom-tofu mixture to the bowl and mix well to combine, adjusting salt to taste.
  8. Serve at room temperature or chilled, garnished with additional herbs if desired.
