- Shallots - 2, finely sliced
- Fresh mint leaves - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce - 2 tablespoons
- Rice powder - 1 tablespoon
- Chili flakes - 1 teaspoon (adjust to taste)
- Lettuce leaves - 4, for serving
- Cucumber - 1, sliced (for garnish)
- Roasted peanuts - 20 grams, crushed (for garnish)
Steps
- In a skillet over medium heat, cook the ground pork for about 5-7 minutes, stirring occasionally until fully cooked and browned.
- Add the sliced shallots to the skillet and cook for an additional 2 minutes until they are soft.
- Remove the skillet from heat and let the mixture cool slightly.
- In a large bowl, combine the cooked pork and shallots with lime juice, fish sauce, rice powder, and chili flakes. Mix well.
- Fold in the chopped mint and cilantro gently until evenly distributed.
- Serve the larb on a bed of lettuce leaves, garnished with sliced cucumber and crushed roasted peanuts.
