Ingredients

  • Ground pork - 250 grams
  • Shallots - 2, finely sliced
  • Fresh mint leaves - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Rice powder - 1 tablespoon
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Lettuce leaves - 4, for serving
  • Cucumber - 1, sliced (for garnish)
  • Roasted peanuts - 20 grams, crushed (for garnish)

Steps

  1. In a skillet over medium heat, cook the ground pork for about 5-7 minutes, stirring occasionally until fully cooked and browned.
  2. Add the sliced shallots to the skillet and cook for an additional 2 minutes until they are soft.
  3. Remove the skillet from heat and let the mixture cool slightly.
  4. In a large bowl, combine the cooked pork and shallots with lime juice, fish sauce, rice powder, and chili flakes. Mix well.
  5. Fold in the chopped mint and cilantro gently until evenly distributed.
  6. Serve the larb on a bed of lettuce leaves, garnished with sliced cucumber and crushed roasted peanuts.
