  • Cucumber - 1 small, diced
  • Lettuce leaves - 4 for serving
  • Peanuts - 30 grams, crushed (for garnish)

Steps

  1. In a medium bowl, rehydrate the textured vegetable protein (TVP) by soaking it in vegetable broth for about 10 minutes until softened.
  2. Drain any excess broth from the TVP and transfer it to a mixing bowl.
  3. Add lime juice, soy sauce, and rice powder to the TVP, mixing well to combine all ingredients.
  4. Stir in the chopped mint, cilantro, sliced red onion, and chopped bird's eye chili, mixing until evenly distributed.
