- Mushroom mix (shiitake, button, and oyster) - 300 grams, finely chopped
- Lime juice - 3 tablespoons
- Soy sauce - 2 tablespoons
- Chili flakes - 1 teaspoon
- Fresh mint leaves - 20 grams, chopped
- Fresh cilantro - 20 grams, chopped
- Green onions - 2, finely sliced
- Roasted rice powder - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Cucumber - 1, sliced (for serving)
- Lettuce leaves - 4 (for serving)
Steps
- Heat the vegetable oil in a pan over medium heat.
- Add the finely chopped mushrooms and sauté for about 5-7 minutes until they are tender and any moisture has evaporated.
- Stir in the soy sauce, lime juice, and chili flakes, cooking for another 2 minutes.
- Remove the pan from heat and let the mixture cool slightly.
- Once cooled, mix in the chopped mint, cilantro, green onions, and roasted rice powder until well combined.
- Serve the Larb Hed on a bed of lettuce leaves, garnished with cucumber slices.
