Ingredients

  • Mushroom mix (shiitake, button, and oyster) - 300 grams, finely chopped
  • Lime juice - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Chili flakes - 1 teaspoon
  • Fresh mint leaves - 20 grams, chopped
  • Fresh cilantro - 20 grams, chopped
  • Green onions - 2, finely sliced
  • Roasted rice powder - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Cucumber - 1, sliced (for serving)
  • Lettuce leaves - 4 (for serving)

Steps

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the finely chopped mushrooms and sauté for about 5-7 minutes until they are tender and any moisture has evaporated.
  3. Stir in the soy sauce, lime juice, and chili flakes, cooking for another 2 minutes.
  4. Remove the pan from heat and let the mixture cool slightly.
  5. Once cooled, mix in the chopped mint, cilantro, green onions, and roasted rice powder until well combined.
  6. Serve the Larb Hed on a bed of lettuce leaves, garnished with cucumber slices.
