Ingredients

  • Shrimp, peeled and deveined - 200 grams
  • Lime juice - 3 tablespoons
  • Fish sauce - 2 tablespoons
  • Shallots, finely sliced - 2 medium
  • Fresh mint leaves, chopped - 1/4 cup
  • Fresh cilantro, chopped - 1/4 cup
  • Thai bird's eye chili, finely chopped - 1 (adjust to taste)
  • Roasted rice powder - 1 tablespoon
  • Lettuce leaves (for serving) - 4 large leaves
  • Cucumber, thinly sliced - 1/2 medium

Steps

  1. In a small pot, bring salted water to a boil and cook the shrimp for about 2-3 minutes until they turn pink and opaque. Drain and let cool.
  2. In a mixing bowl, combine the lime juice, fish sauce, shallots, and bird's eye chili. Stir well to combine.
  3. Add the cooled shrimp to the bowl, along with the chopped mint, cilantro, and roasted rice powder. Toss everything together until well coated.
  4. To serve, place the mixture on lettuce leaves and garnish with cucumber slices.
