- Fresh cilantro, chopped - 1/4 cup
- Thai bird's eye chili, finely chopped - 1 (adjust to taste)
- Roasted rice powder - 1 tablespoon
- Lettuce leaves (for serving) - 4 large leaves
- Cucumber, thinly sliced - 1/2 medium
Steps
- In a small pot, bring salted water to a boil and cook the shrimp for about 2-3 minutes until they turn pink and opaque. Drain and let cool.
- In a mixing bowl, combine the lime juice, fish sauce, shallots, and bird's eye chili. Stir well to combine.
- Add the cooled shrimp to the bowl, along with the chopped mint, cilantro, and roasted rice powder. Toss everything together until well coated.
- To serve, place the mixture on lettuce leaves and garnish with cucumber slices.
