- Minced chicken breast - 300 grams
- Lime juice - 3 tablespoons
- Fish sauce - 2 tablespoons
- Palm sugar - 1 tablespoon
- Shallots - 2, finely sliced
- Fresh mint leaves - 1/2 cup, chopped
- Fresh cilantro - 1/2 cup, chopped
- Thai bird's eye chili - 1, finely chopped (adjust to taste)
- Cooked jasmine rice - 100 grams (for serving)
- Romaine lettuce leaves - 4, for serving
- Roasted rice powder - 2 teaspoons (optional)
Steps
- Preheat a grill or grill pan over medium heat.
- In a bowl, combine minced chicken with 1 tablespoon of lime juice, fish sauce, and palm sugar. Mix well.
- Form the chicken mixture into small patties or keep it loose for easier grilling.
- Grill the chicken for about 5-7 minutes on each side until fully cooked and slightly charred. Remove from heat and let it rest for a few minutes.
- While the chicken is resting, prepare the dressing by mixing the remaining lime juice, fish sauce, and palm sugar in a small bowl until well combined.
- In a large mixing bowl, combine the grilled chicken (chopped), shallots, mint, cilantro, and bird's eye chili. Pour the dressing over the mixture and toss gently to combine.
- If using, sprinkle roasted rice powder over the salad and mix well.
- To serve, place the larb gai yang in the center of lettuce leaves and serve with jasmine rice on the side.
