Ingredients

  • Cauliflower - 300 grams (for crust)
  • Mozzarella cheese - 100 grams, shredded
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground chicken - 200 grams
  • Red onion - 50 grams, finely chopped
  • Fish sauce - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Chili flakes - 1 teaspoon
  • Fresh mint leaves - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Sliced cucumbers - 100 grams (for topping)
  • Crushed peanuts - 20 grams (for garnish)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. For the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes. Drain and let cool.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice. Transfer to a bowl and mix in shredded mozzarella, olive oil, and a pinch of salt.
  4. Spread the mixture onto a parchment-lined baking sheet to form a pizza crust, about 1 cm thick. Bake for 15-20 minutes until golden and firm.
  5. In a skillet over medium heat, add minced garlic and ground chicken, cooking until the chicken is browned, about 5-7 minutes.
  6. Add the chopped red onion, fish sauce, lime juice, and chili flakes to the skillet. Cook for another 3-4 minutes until the onion softens.
  7. Remove from heat and stir in the chopped mint and cilantro.
  8. Once the crust is ready, spread the chicken larb mixture evenly over the pizza base.
  9. Top with sliced cucumbers and sprinkle with crushed peanuts.
  10. Return to the oven for an additional 5 minutes to warm the toppings.
  11. Slice and serve hot, garnished with extra herbs if desired.
