- Lime juice - 2 tablespoons

- Fresh mint leaves - 10 grams, chopped
- Fresh cilantro - 10 grams, chopped

Steps
- Preheat the oven to 220°C (428°F).
- For the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes. Drain and let cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice. Transfer to a bowl and mix in shredded mozzarella, olive oil, and a pinch of salt.
- Spread the mixture onto a parchment-lined baking sheet to form a pizza crust, about 1 cm thick. Bake for 15-20 minutes until golden and firm.
- In a skillet over medium heat, add minced garlic and ground chicken, cooking until the chicken is browned, about 5-7 minutes.
- Add the chopped red onion, fish sauce, lime juice, and chili flakes to the skillet. Cook for another 3-4 minutes until the onion softens.
- Remove from heat and stir in the chopped mint and cilantro.
- Once the crust is ready, spread the chicken larb mixture evenly over the pizza base.
- Top with sliced cucumbers and sprinkle with crushed peanuts.
- Return to the oven for an additional 5 minutes to warm the toppings.
- Slice and serve hot, garnished with extra herbs if desired.
