Ingredients

  • Rice noodles - 100 grams
  • Chicken breast, boneless and skinless - 200 grams
  • Chicken broth (Kosher) - 500 ml
  • Shallots, finely chopped - 2 tablespoons
  • Garlic, minced - 1 clove
  • Ginger, sliced - 1 teaspoon
  • Soy sauce (Kosher) - 2 tablespoons
  • Fish sauce (Kosher) - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Green onions, chopped - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons
  • Bean sprouts - 100 grams
  • Chili flakes (optional) - to taste
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, bring the chicken broth to a simmer over medium heat.
  2. Add the shallots, garlic, and ginger to the broth, cooking for 5 minutes until fragrant.
  3. While the broth simmers, cook the rice noodles according to package instructions, then drain and set aside.
  4. Add the chicken breast to the simmering broth and cook for about 10 minutes until fully cooked. Remove the chicken, let it cool slightly, and slice it thinly.
  5. Stir in the soy sauce, fish sauce, lime juice, and season with salt and pepper to taste.
  6. Divide the cooked rice noodles between two bowls, top with sliced chicken, and ladle the hot broth over the noodles.
  7. Garnish with green onions, cilantro, and bean sprouts. Add chili flakes if desired.
