Ingredients

  • Jasmine rice - 100 grams
  • Cucumber - 1 medium, finely diced
  • Carrot - 1 medium, grated
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, finely chopped
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Lime juice - 30 ml
  • Soy sauce - 15 ml
  • Coconut sugar - 5 grams
  • Peanuts - 30 grams, crushed
  • Lettuce leaves - 4 large, for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it in a pot with 200 ml of water. Bring to a boil, then reduce heat and simmer covered for about 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
  2. In a large mixing bowl, combine the diced cucumber, grated carrot, halved cherry tomatoes, chopped red onion, cilantro, and mint.
  3. In a small bowl, whisk together the lime juice, soy sauce, and coconut sugar until the sugar dissolves.
  4. Add the cooled jasmine rice to the vegetable mixture and pour the dressing over it. Toss everything together gently to combine.
  5. Serve the Khao Yum on a bed of lettuce leaves, and sprinkle with crushed peanuts on top.
