Ingredients
- Jasmine rice - 100 grams
- Cucumber - 1 medium, finely diced
- Carrot - 1 medium, grated
- Cherry tomatoes - 100 grams, halved
- Red onion - 1 small, finely chopped
- Fresh cilantro - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Lime juice - 30 ml
- Soy sauce - 15 ml
- Coconut sugar - 5 grams
- Peanuts - 30 grams, crushed
- Lettuce leaves - 4 large, for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it in a pot with 200 ml of water. Bring to a boil, then reduce heat and simmer covered for about 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
- In a large mixing bowl, combine the diced cucumber, grated carrot, halved cherry tomatoes, chopped red onion, cilantro, and mint.
- In a small bowl, whisk together the lime juice, soy sauce, and coconut sugar until the sugar dissolves.
- Add the cooled jasmine rice to the vegetable mixture and pour the dressing over it. Toss everything together gently to combine.
- Serve the Khao Yum on a bed of lettuce leaves, and sprinkle with crushed peanuts on top.
