- Jasmine rice - 100 grams
- Water - 800 ml
- Vegetable broth - 400 ml
- Tofu, firm - 150 grams, cubed
- Mushrooms, shiitake or button - 100 grams, sliced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 inch, grated
- Fresh cilantro - 10 grams, chopped
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a large pot, combine 800 ml of water and 400 ml of vegetable broth, bringing it to a boil.
- Add the rinsed jasmine rice to the boiling broth, reduce the heat, and let it simmer for 15 minutes until the rice is tender.
- In a separate pan, sauté the minced garlic and grated ginger in a little water over medium heat until fragrant, about 2 minutes.
- Add the cubed tofu, sliced mushrooms, carrot, and zucchini to the pan and cook for another 5-7 minutes until the vegetables are tender.
- Once the rice is cooked, add the sautéed vegetables and tofu mixture to the pot with rice.
- Stir in the soy sauce, lime juice, and season with salt and black pepper to taste.
- Let the soup simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve hot, garnished with chopped green onions and fresh cilantro.
