Ingredients

  • Jasmine rice - 100 grams
  • Water - 800 ml
  • Vegetable broth - 400 ml
  • Tofu, firm - 150 grams, cubed
  • Mushrooms, shiitake or button - 100 grams, sliced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 inch, grated
  • Fresh cilantro - 10 grams, chopped
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a large pot, combine 800 ml of water and 400 ml of vegetable broth, bringing it to a boil.
  3. Add the rinsed jasmine rice to the boiling broth, reduce the heat, and let it simmer for 15 minutes until the rice is tender.
  4. In a separate pan, sauté the minced garlic and grated ginger in a little water over medium heat until fragrant, about 2 minutes.
  5. Add the cubed tofu, sliced mushrooms, carrot, and zucchini to the pan and cook for another 5-7 minutes until the vegetables are tender.
  6. Once the rice is cooked, add the sautéed vegetables and tofu mixture to the pot with rice.
  7. Stir in the soy sauce, lime juice, and season with salt and black pepper to taste.
  8. Let the soup simmer for an additional 5 minutes to allow the flavors to meld together.
  9. Serve hot, garnished with chopped green onions and fresh cilantro.
