Ingredients

  • Jasmine rice - 100 grams
  • Water - 1 liter
  • Vegetable broth - 250 ml
  • Fresh ginger - 1 tablespoon, minced
  • Garlic - 2 cloves, minced
  • Shallots - 2, sliced
  • Carrot - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Spinach - 50 grams, fresh
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onion - 2, sliced
  • Chili flakes - 1 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a large pot, combine 1 liter of water and 250 ml of vegetable broth, then bring to a boil.
  3. Add the rinsed rice to the boiling water and reduce the heat to a simmer. Cook for about 15 minutes, stirring occasionally.
  4. In a separate pan, sauté the minced ginger, garlic, and sliced shallots in a little water or vegetable broth until fragrant, about 3-5 minutes.
  5. Add the diced carrot and sliced mushrooms to the pan. Cook for another 5 minutes until the vegetables soften.
  6. Once the rice is cooked, add the sautéed vegetables to the rice pot along with the fresh spinach, soy sauce, lime juice, and chili flakes if using. Stir well and cook for another 5 minutes.
  7. Season with salt and black pepper to taste. Serve hot, garnished with fresh cilantro and sliced green onions.
