Ingredients

  • Chili flakes - 1 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Shallots - 2, finely chopped
  • Cucumber - 1 small, diced
  • Carrot - 1 small, grated
  • Peanuts - 30 grams, crushed
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon

Steps

  1. In a bowl, mix the fermented soybean paste, lime juice, soy sauce, and sesame oil to create a smooth dip.
  2. Add the finely chopped shallots, chili flakes, and half of the chopped coriander to the dip, and stir well.
  3. Prepare the rice crackers by toasting them in a dry pan over medium heat until they are golden and crispy, about 5 minutes.
  4. On a serving plate, arrange the toasted rice crackers.
  5. Top each rice cracker with a spoonful of the soybean dip.
  6. Garnish with diced cucumber, grated carrot, crushed peanuts, and the remaining coriander.
  7. Serve immediately as a delightful appetizer.
