Ingredients
- Thai rice crackers - 8 pieces
- Canned coconut milk - 100 ml
- Red lentils - 50 grams
- Garlic - 2 cloves, minced
- Shallots - 1 small, finely chopped
- Red chili - 1, finely chopped
- Lime juice - 1 tablespoon
- Soy sauce - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the red lentils under cold water until the water runs clear.
- In a saucepan, combine the rinsed lentils with 200 ml of water and bring to a boil. Reduce heat and simmer for about 15 minutes until lentils are soft and water is absorbed.
- In a separate pan, heat a small amount of oil over medium heat. Add minced garlic, chopped shallots, and red chili, sautéing until fragrant and shallots are translucent.
- Add the cooked lentils to the pan along with coconut milk, soy sauce, lime juice, salt, and pepper. Stir well and cook for another 5 minutes on low heat, allowing the flavors to meld.
- Remove from heat and stir in chopped cilantro.
- To serve, place the rice crackers on a plate and top each with a generous spoonful of the coconut-lentil spread.
