Ingredients

  • Thai rice crackers - 8 pieces
  • Canned coconut milk - 100 ml
  • Red lentils - 50 grams
  • Garlic - 2 cloves, minced
  • Shallots - 1 small, finely chopped
  • Red chili - 1, finely chopped
  • Lime juice - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a saucepan, combine the rinsed lentils with 200 ml of water and bring to a boil. Reduce heat and simmer for about 15 minutes until lentils are soft and water is absorbed.
  3. In a separate pan, heat a small amount of oil over medium heat. Add minced garlic, chopped shallots, and red chili, sautéing until fragrant and shallots are translucent.
  4. Add the cooked lentils to the pan along with coconut milk, soy sauce, lime juice, salt, and pepper. Stir well and cook for another 5 minutes on low heat, allowing the flavors to meld.
  5. Remove from heat and stir in chopped cilantro.
  6. To serve, place the rice crackers on a plate and top each with a generous spoonful of the coconut-lentil spread.
