Ingredients

  • Shirataki noodles - 200 grams
  • Coconut milk - 200 ml

  • Red curry paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Tofu, firm - 150 grams, cubed
  • Bok choy - 100 grams, chopped
  • Green onions - 2, sliced
  • Cilantro - 2 tablespoons, chopped
  • Chili flakes - 1 teaspoon (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the shirataki noodles under cold water for a few minutes and drain well.
  2. In a medium pot, heat a little oil over medium heat and add the red curry paste, stirring for about 1 minute until fragrant.
  3. Add the coconut milk and vegetable broth to the pot, stirring to combine.
