- Coconut milk - 200 ml
- Vegetable broth - 100 ml
- Red curry paste - 2 tablespoons
- Chickpeas (cooked) - 100 g
- Red onion - 1 small, sliced
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Green onions - 2, sliced
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Chili flakes - to taste
Steps
- Preheat the oven to 220°C (428°F).
- In a saucepan, heat olive oil over medium heat. Add sliced red onion and sauté until translucent, about 3 minutes.
- Stir in the red curry paste and cook for another minute until fragrant.
- Pour in the coconut milk and vegetable broth, stirring to combine. Bring to a simmer and add the chickpeas, bell pepper, and carrot. Cook for 5-7 minutes until the vegetables are slightly tender.
- Add lime juice, soy sauce, and salt to taste. Remove from heat.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a pizza stone or baking sheet.
- Spread the coconut curry mixture evenly over the pizza crust, leaving a small border around the edges.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
- Remove the pizza from the oven and sprinkle with chopped cilantro and sliced green onions. Add chili flakes for extra spice if desired.
- Slice and serve hot.
