Ingredients

  • Pizza dough - 1 pizza crust (about 250g)
  • Coconut milk - 200 ml
  • Vegetable broth - 100 ml
  • Red curry paste - 2 tablespoons
  • Chickpeas (cooked) - 100 g
  • Red onion - 1 small, sliced
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onions - 2, sliced
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Chili flakes - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a saucepan, heat olive oil over medium heat. Add sliced red onion and sauté until translucent, about 3 minutes.
  3. Stir in the red curry paste and cook for another minute until fragrant.
  4. Pour in the coconut milk and vegetable broth, stirring to combine. Bring to a simmer and add the chickpeas, bell pepper, and carrot. Cook for 5-7 minutes until the vegetables are slightly tender.
  5. Add lime juice, soy sauce, and salt to taste. Remove from heat.
  6. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a pizza stone or baking sheet.
  7. Spread the coconut curry mixture evenly over the pizza crust, leaving a small border around the edges.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
  9. Remove the pizza from the oven and sprinkle with chopped cilantro and sliced green onions. Add chili flakes for extra spice if desired.
  10. Slice and serve hot.
