Ingredients

  • Jasmine rice - 150 grams
  • Coconut milk - 200 ml
  • Chicken breast - 200 grams, diced
  • Eggs - 2 large
  • Green curry paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Fresh cilantro - 20 grams, chopped
  • Lime - 1, cut into wedges
  • Peanuts - 30 grams, crushed
  • Vegetable oil - 1 tablespoon
  • Water - 400 ml

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, bring 400 ml of water to a boil, then add the soaked rice. Reduce the heat to low, cover, and cook for about 15 minutes or until rice is tender and water is absorbed.
  3. While the rice is cooking, heat vegetable oil in a pan over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the green curry paste and cook for another 2 minutes until fragrant.
  5. Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir well and let it simmer for 5 minutes.
  6. In a separate pan, fry the eggs sunny-side up, or to your preference.
  7. Once the rice is cooked, fluff it with a fork and serve in bowls topped with the coconut chicken mixture.
  8. Garnish each bowl with fresh cilantro, crushed peanuts, and a lime wedge. Top with a fried egg before serving.
