- Jasmine rice - 150 grams
- Coconut milk - 200 ml
- Chicken breast - 200 grams, diced
- Eggs - 2 large
- Green curry paste - 2 tablespoons
- Soy sauce - 1 tablespoon
- Fish sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Fresh cilantro - 20 grams, chopped
- Lime - 1, cut into wedges
- Peanuts - 30 grams, crushed
- Vegetable oil - 1 tablespoon
- Water - 400 ml
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, bring 400 ml of water to a boil, then add the soaked rice. Reduce the heat to low, cover, and cook for about 15 minutes or until rice is tender and water is absorbed.
- While the rice is cooking, heat vegetable oil in a pan over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Stir in the green curry paste and cook for another 2 minutes until fragrant.
- Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir well and let it simmer for 5 minutes.
- In a separate pan, fry the eggs sunny-side up, or to your preference.
- Once the rice is cooked, fluff it with a fork and serve in bowls topped with the coconut chicken mixture.
- Garnish each bowl with fresh cilantro, crushed peanuts, and a lime wedge. Top with a fried egg before serving.
