Ingredients

  • Rice noodles - 200 grams
  • Coconut milk - 400 ml
  • Vegetable broth - 500 ml
  • Red curry paste - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Tofu (firm) - 200 grams, diced
  • Green onions - 2, sliced
  • Cilantro - 30 grams, chopped
  • Bok choy - 100 grams, chopped
  • Crispy fried noodles - 50 grams, for topping
  • Chili flakes - to taste
  • Salt - to taste

Steps

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. In a large pot, heat a small amount of oil over medium heat and add the red curry paste, stirring for about 1 minute until fragrant.
  3. Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.
  4. Add the diced tofu, soy sauce, brown sugar, and lime juice. Let it simmer for about 10 minutes.
  5. Add the chopped bok choy and cook for an additional 5 minutes until wilted.
  6. Season the broth with salt and chili flakes to taste.
  7. To serve, divide the cooked rice noodles into two bowls and ladle the hot curry broth with tofu and bok choy over them.
  8. Garnish with sliced green onions, chopped cilantro, and crispy fried noodles on top.
