- Bok choy - 100 grams, chopped
- Crispy fried noodles - 50 grams, for topping

Steps
- Cook the rice noodles according to package instructions, drain, and set aside.
- In a large pot, heat a small amount of oil over medium heat and add the red curry paste, stirring for about 1 minute until fragrant.
- Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.
- Add the diced tofu, soy sauce, brown sugar, and lime juice. Let it simmer for about 10 minutes.
- Add the chopped bok choy and cook for an additional 5 minutes until wilted.
- Season the broth with salt and chili flakes to taste.
- To serve, divide the cooked rice noodles into two bowls and ladle the hot curry broth with tofu and bok choy over them.
- Garnish with sliced green onions, chopped cilantro, and crispy fried noodles on top.
