Ingredients
- Beef (chuck or brisket) - 300 grams, cut into bite-sized pieces
- Coconut milk - 400 ml
- Chicken or vegetable broth - 200 ml
- Khao Soi curry paste - 3 tablespoons
- Soy sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Egg noodles - 200 grams
- Vegetable oil - 2 tablespoons
- Shallots - 2, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Cilantro - for garnish
- Green onions - for garnish
- Pickled mustard greens - for serving
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the chopped shallots, garlic, and ginger, and sauté until fragrant, about 3-4 minutes.
- Stir in the Khao Soi curry paste and cook for another 2 minutes, allowing the flavors to meld.
- Add the beef pieces to the pot, stirring to coat them in the curry paste. Cook for about 5 minutes until the beef is browned on all sides.
- Pour in the coconut milk and chicken or vegetable broth, then bring to a gentle simmer. Add the soy sauce and brown sugar, stirring to combine.
- Cover the pot and let the beef simmer for 25-30 minutes until tender, stirring occasionally.
- While the beef is cooking, bring a separate pot of salted water to a boil. Cook the egg noodles according to package instructions, then drain and set aside.
- Once the beef is tender, stir in the lime juice and taste for seasoning. Adjust with more soy sauce or sugar if desired.
- To serve, place a portion of cooked egg noodles in a bowl, ladle the beef curry soup over the noodles, and top with crispy fried noodles if desired. Garnish with chopped cilantro and green onions, and serve with pickled mustard greens on the side.
