Ingredients

  • Coconut milk - 400 milliliters
  • Vegetable broth - 200 milliliters
  • Red curry paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Tofu (firm, cubed) - 150 grams
  • Red onion (sliced) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Green onion (chopped) - 2 tablespoons
  • Coriander leaves (fresh, for garnish) - a handful
  • Crispy fried noodles - for topping
  • Chili flakes - to taste

Steps

  1. Cook the egg noodles according to package instructions, drain, and set aside.
  2. In a large pot, heat a tablespoon of oil over medium heat. Add the sliced red onion, minced garlic, and grated ginger, and sauté until fragrant and the onions are translucent.
  3. Stir in the red curry paste and cook for another 1-2 minutes.
  4. Add the coconut milk, vegetable broth, soy sauce, and brown sugar to the pot. Stir well and bring to a simmer.
  5. Add the cubed tofu to the pot and let it cook for about 5-7 minutes, allowing the flavors to meld.
  6. Once the tofu is heated through, add the cooked egg noodles and lime juice to the pot, stirring gently to combine everything.
  7. Serve the Khao Soi Noodles in bowls, topped with crispy fried noodles, chopped green onions, and fresh coriander leaves. Adjust seasoning with chili flakes as desired.
