- Tofu (firm, cubed) - 150 grams
- Red onion (sliced) - 1 medium
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Green onion (chopped) - 2 tablespoons
- Coriander leaves (fresh, for garnish) - a handful
- Crispy fried noodles - for topping
- Chili flakes - to taste
Steps
- Cook the egg noodles according to package instructions, drain, and set aside.
- In a large pot, heat a tablespoon of oil over medium heat. Add the sliced red onion, minced garlic, and grated ginger, and sauté until fragrant and the onions are translucent.
- Stir in the red curry paste and cook for another 1-2 minutes.

- Add the cubed tofu to the pot and let it cook for about 5-7 minutes, allowing the flavors to meld.
- Once the tofu is heated through, add the cooked egg noodles and lime juice to the pot, stirring gently to combine everything.
- Serve the Khao Soi Noodles in bowls, topped with crispy fried noodles, chopped green onions, and fresh coriander leaves. Adjust seasoning with chili flakes as desired.
