  • Brown sugar - 1 tablespoon
  • Tofu (cubed) - 150 grams
  • Vegetable oil - 2 tablespoons
  • Shallots (sliced) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 tablespoon
  • Bok choy (chopped) - 100 grams
  • Cilantro (for garnish) - a handful
  • Lime wedges (for serving) - 1 lime
  • Chili flakes (optional) - to taste

Steps

  1. Cook the egg noodles according to package instructions, drain, and set aside.
  2. In a large pot, heat vegetable oil over medium heat. Add sliced shallots and sauté until translucent, about 3 minutes.
  3. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Stir in the red curry paste and cook for 2-3 minutes until the oil begins to separate.
  5. Pour in the coconut milk and vegetable broth, stirring well to combine. Bring to a gentle simmer.
  6. Add the cubed tofu, soy sauce, brown sugar, and lime juice to the pot. Let simmer for 10 minutes.
  7. Add the chopped bok choy and cook for an additional 2-3 minutes until wilted.
  8. Serve the soup hot, placing the cooked noodles in bowls and ladling the broth and tofu over them.
  9. Top with crispy fried noodles, garnish with cilantro, and serve with lime wedges and chili flakes on the side.
