- Shallots - 2, finely chopped

- Brown sugar - 1 teaspoon
- Lime - 1, juiced
- Cilantro - 30 grams, chopped
- Red chili flakes - 1 teaspoon (optional)
- Crispy fried noodles - 50 grams, for garnish
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and chopped shallots, and sauté until fragrant and translucent, about 2-3 minutes.
- Stir in the yellow curry paste and cook for another 2 minutes, allowing the flavors to meld.
- Add the diced chicken breast to the pot and cook until browned, about 5-7 minutes.
- Pour in the coconut milk and chicken broth, then stir to combine. Bring the mixture to a simmer.
- Add the soy sauce and brown sugar, stirring well. Let the curry simmer for about 10-15 minutes until the chicken is cooked through.
- While the curry simmers, cook the egg noodles according to package instructions. Drain and set aside.
- Once the curry is ready, squeeze in the fresh lime juice and adjust seasoning if necessary.
- To serve, place a portion of the cooked egg noodles in a bowl, ladle the curry over the top, and garnish with crispy fried noodles, chopped cilantro, and red chili flakes if desired.
