Ingredients

  • Beef (chuck or brisket) - 300 grams
  • Coconut milk - 200 ml
  • Yellow curry paste - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Egg noodles - 150 grams
  • Vegetable oil - 2 tablespoons
  • Shallots - 2, thinly sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Cilantro leaves - for garnish
  • Chili oil - for serving
  • Lime wedges - for serving

Steps

  1. In a bowl, combine the beef with coconut milk, yellow curry paste, fish sauce, brown sugar, and lime juice. Marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet over medium heat. Add shallots, garlic, and ginger; sauté until fragrant and shallots are translucent.
  3. Add the marinated beef to the skillet and cook until browned on all sides, about 5-7 minutes.
  4. Pour in any remaining marinade and simmer for about 15 minutes until the beef is tender and the sauce thickens slightly.
  5. Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
  6. To serve, place a portion of the noodles in a bowl, ladle the beef and sauce over the top, and garnish with cilantro leaves. Drizzle with chili oil and serve with lime wedges on the side.
