- Egg noodles - 150 grams
- Vegetable oil - 2 tablespoons
- Shallots - 2, thinly sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Cilantro leaves - for garnish
- Chili oil - for serving

Steps
- In a bowl, combine the beef with coconut milk, yellow curry paste, fish sauce, brown sugar, and lime juice. Marinate for at least 30 minutes.
- Heat vegetable oil in a large skillet over medium heat. Add shallots, garlic, and ginger; sauté until fragrant and shallots are translucent.
- Add the marinated beef to the skillet and cook until browned on all sides, about 5-7 minutes.
- Pour in any remaining marinade and simmer for about 15 minutes until the beef is tender and the sauce thickens slightly.
- Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
- To serve, place a portion of the noodles in a bowl, ladle the beef and sauce over the top, and garnish with cilantro leaves. Drizzle with chili oil and serve with lime wedges on the side.
