Ingredients

  • Pork belly - 250 grams, cut into bite-sized pieces
  • Coconut milk - 400 ml
  • Chicken broth - 500 ml
  • Yellow curry paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Egg noodles - 100 grams
  • Fresh cilantro - for garnish
  • Red onion - 1 small, thinly sliced
  • Pickled mustard greens - for garnish
  • Chili oil - for drizzling (optional)
  • Salt - to taste

Steps

  1. In a pot, heat a little oil over medium heat, add the yellow curry paste and sauté for 2-3 minutes until fragrant.
  2. Add the pork belly to the pot and cook for about 5 minutes until browned.
  3. Pour in the chicken broth and coconut milk, then stir in the soy sauce, brown sugar, and salt. Bring to a simmer.
  4. Reduce heat and let it cook for 20 minutes until the pork is tender and the flavors meld together.
  5. While the soup is simmering, cook the egg noodles according to package instructions, then drain and set aside.
  6. Once the soup is ready, adjust seasoning with lime juice and more salt if needed.
  7. To serve, place a portion of the cooked noodles in a bowl, ladle the soup over the noodles, and garnish with fresh cilantro, sliced red onion, and pickled mustard greens.
  8. Drizzle with chili oil if desired and serve hot.
