- Pork belly - 250 grams, cut into bite-sized pieces
- Coconut milk - 400 ml
- Chicken broth - 500 ml
- Yellow curry paste - 2 tablespoons
- Soy sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Egg noodles - 100 grams
- Fresh cilantro - for garnish
- Red onion - 1 small, thinly sliced
- Pickled mustard greens - for garnish
- Chili oil - for drizzling (optional)
- Salt - to taste
Steps
- In a pot, heat a little oil over medium heat, add the yellow curry paste and sauté for 2-3 minutes until fragrant.
- Add the pork belly to the pot and cook for about 5 minutes until browned.
- Pour in the chicken broth and coconut milk, then stir in the soy sauce, brown sugar, and salt. Bring to a simmer.
- Reduce heat and let it cook for 20 minutes until the pork is tender and the flavors meld together.
- While the soup is simmering, cook the egg noodles according to package instructions, then drain and set aside.
- Once the soup is ready, adjust seasoning with lime juice and more salt if needed.
- To serve, place a portion of the cooked noodles in a bowl, ladle the soup over the noodles, and garnish with fresh cilantro, sliced red onion, and pickled mustard greens.
- Drizzle with chili oil if desired and serve hot.
