- Coconut milk - 200 ml
- Chicken breast - 200 grams, diced
- Eggs - 2 large
- Thai red curry paste - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Chicken broth - 300 ml
- Soy sauce - 1 tablespoon
- Fish sauce - 1 tablespoon
- Lime - 1, juiced
- Fresh cilantro - 10 grams, chopped
- Spring onions - 2, sliced
- Salt - to taste

Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
- In a pot, heat the vegetable oil over medium heat and add the diced chicken breast. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the Thai red curry paste and cook for another 2 minutes until fragrant.
- Add the chicken broth and coconut milk to the pot. Bring to a simmer.
- While the sauce simmers, cook the soaked rice according to package instructions until fluffy.
- In a separate pan, fry the eggs sunny-side up until the whites are set but yolks are still runny.
- Once the sauce has thickened slightly, stir in the soy sauce, fish sauce, lime juice, salt, and black pepper to taste.
- Serve the cooked rice in bowls, topped with the chicken curry sauce, and finish with a fried egg on top.
- Garnish with fresh cilantro and sliced spring onions before serving.
