Ingredients

  • Jasmine rice - 150 grams
  • Coconut milk - 200 ml
  • Chicken breast - 200 grams, diced
  • Eggs - 2 large
  • Thai red curry paste - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Chicken broth - 300 ml
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Lime - 1, juiced
  • Fresh cilantro - 10 grams, chopped
  • Spring onions - 2, sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a pot, heat the vegetable oil over medium heat and add the diced chicken breast. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the Thai red curry paste and cook for another 2 minutes until fragrant.
  4. Add the chicken broth and coconut milk to the pot. Bring to a simmer.
  5. While the sauce simmers, cook the soaked rice according to package instructions until fluffy.
  6. In a separate pan, fry the eggs sunny-side up until the whites are set but yolks are still runny.
  7. Once the sauce has thickened slightly, stir in the soy sauce, fish sauce, lime juice, salt, and black pepper to taste.
  8. Serve the cooked rice in bowls, topped with the chicken curry sauce, and finish with a fried egg on top.
  9. Garnish with fresh cilantro and sliced spring onions before serving.
