  • Brown sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Spring onions - 2, sliced
  • Chili flakes - 1 teaspoon (optional)
  • Peanuts - 30 grams, crushed for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then cook it according to package instructions with 300 ml of water.
  2. In a large pan, heat a tablespoon of oil over medium heat and add the diced chicken breast, cooking until browned and cooked through, about 5-7 minutes.
  3. Stir in the red curry paste and cook for another 2 minutes until fragrant.
  4. Add the coconut milk, vegetable broth, fish sauce, and brown sugar to the pan, stirring well to combine.
  5. Bring the mixture to a gentle simmer and let it cook for about 15 minutes, allowing the flavors to meld.
  6. Stir in the lime juice and adjust seasoning to taste, adding more fish sauce or sugar if needed.
  7. Once the rice is cooked, divide it into two bowls and ladle the coconut curry mixture over the rice.
  8. Garnish each bowl with chopped cilantro, sliced spring onions, crushed peanuts, and chili flakes if desired.
