  • Lime juice - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook according to package instructions, typically in 300 ml of water for 15-18 minutes.
  2. In a large pan, heat the vegetable oil over medium heat and sauté the minced garlic and chopped shallots until fragrant and translucent.
  3. Add the diced chicken breast to the pan and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the red curry paste and cook for another 2 minutes to release the flavors.
  5. Pour in the coconut milk, fish sauce, and brown sugar, stirring well to combine. Bring the mixture to a gentle simmer and let it cook for 10 minutes until the chicken is cooked through and the sauce thickens slightly.
  6. Remove from heat and stir in the lime juice.
  7. Serve the coconut curry chicken over the cooked jasmine rice, garnished with fresh cilantro and sliced green onions.
