- Tofu (firm, cubed) - 200 grams
- Egg noodles (vegan) - 100 grams
- Chopped cilantro - 2 tablespoons
- Green onions (sliced) - 2 tablespoons
- Lime wedges - 2
- Crispy fried shallots - 2 tablespoons
- Chili oil - 1 teaspoon (optional)
Steps
- In a large pot, heat the vegetable broth over medium heat.
- Add the red curry paste, turmeric powder, and brown sugar to the pot. Stir well and cook for 2-3 minutes until fragrant.
- Pour in the coconut milk and soy sauce, then bring to a gentle simmer.
- Add the cubed tofu to the pot and let it simmer for about 10 minutes to absorb the flavors.
- Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
- Once the soup has simmered, add lime juice and adjust seasoning if needed.
- To serve, divide the cooked noodles into bowls, ladle the soup over the noodles, and garnish with chopped cilantro, green onions, crispy fried shallots, and a drizzle of chili oil if desired.
- Serve with lime wedges on the side.
