  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Tofu (firm, cubed) - 200 grams
  • Egg noodles (vegan) - 100 grams
  • Chopped cilantro - 2 tablespoons
  • Green onions (sliced) - 2 tablespoons
  • Lime wedges - 2
  • Crispy fried shallots - 2 tablespoons
  • Chili oil - 1 teaspoon (optional)

Steps

  1. In a large pot, heat the vegetable broth over medium heat.
  2. Add the red curry paste, turmeric powder, and brown sugar to the pot. Stir well and cook for 2-3 minutes until fragrant.
  3. Pour in the coconut milk and soy sauce, then bring to a gentle simmer.
  4. Add the cubed tofu to the pot and let it simmer for about 10 minutes to absorb the flavors.
  5. Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
  6. Once the soup has simmered, add lime juice and adjust seasoning if needed.
  7. To serve, divide the cooked noodles into bowls, ladle the soup over the noodles, and garnish with chopped cilantro, green onions, crispy fried shallots, and a drizzle of chili oil if desired.
  8. Serve with lime wedges on the side.
