- Chicken thighs - 300 grams, boneless and skinless
- Coconut milk - 400 ml
- Chicken broth - 200 ml
- Egg noodles - 200 grams
- Red curry paste - 2 tablespoons
- Shallots - 2, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Fish sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Cilantro - for garnish
- Green onions - for garnish
- Lime wedges - for serving
- Fried egg noodles - for topping
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the chopped shallots, minced garlic, and ginger; sauté until fragrant and translucent, about 3-4 minutes.
- Stir in the red curry paste and cook for another 2 minutes until well combined.
- Add the chicken thighs to the pot and sear them for about 5 minutes, turning occasionally until slightly browned.
- Pour in the coconut milk and chicken broth. Stir to combine, then add the soy sauce, fish sauce, and brown sugar. Bring to a gentle simmer.
- Cover and cook on low heat for about 15 minutes until the chicken is fully cooked and tender.
- While the soup is simmering, cook the egg noodles according to package instructions. Drain and set aside.
- Once the chicken is cooked, remove it from the pot and shred it using two forks. Return the shredded chicken to the pot and add lime juice. Stir well.
- To serve, place a portion of cooked egg noodles in a bowl, ladle the Khao Soi soup over the noodles, and top with crispy fried egg noodles.
- Garnish with chopped cilantro and green onions, and serve with lime wedges on the side.
