Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Coconut milk - 400 ml
  • Chicken broth - 200 ml
  • Egg noodles - 200 grams
  • Red curry paste - 2 tablespoons
  • Shallots - 2, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Cilantro - for garnish
  • Green onions - for garnish
  • Lime wedges - for serving
  • Fried egg noodles - for topping

Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped shallots, minced garlic, and ginger; sauté until fragrant and translucent, about 3-4 minutes.
  2. Stir in the red curry paste and cook for another 2 minutes until well combined.
  3. Add the chicken thighs to the pot and sear them for about 5 minutes, turning occasionally until slightly browned.
  4. Pour in the coconut milk and chicken broth. Stir to combine, then add the soy sauce, fish sauce, and brown sugar. Bring to a gentle simmer.
  5. Cover and cook on low heat for about 15 minutes until the chicken is fully cooked and tender.
  6. While the soup is simmering, cook the egg noodles according to package instructions. Drain and set aside.
  7. Once the chicken is cooked, remove it from the pot and shred it using two forks. Return the shredded chicken to the pot and add lime juice. Stir well.
  8. To serve, place a portion of cooked egg noodles in a bowl, ladle the Khao Soi soup over the noodles, and top with crispy fried egg noodles.
  9. Garnish with chopped cilantro and green onions, and serve with lime wedges on the side.
