  • Cooked chicken breast, shredded - 150 grams
  • Coconut milk - 100 ml
  • Red curry paste - 2 tablespoons
  • Chicken broth - 50 ml
  • Mozzarella cheese, shredded - 100 grams
  • Red onion, thinly sliced - 50 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime wedges - 2 for serving
  • Chili flakes - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a small saucepan, combine coconut milk, red curry paste, and chicken broth. Stir over medium heat until well mixed and heated through, then season with salt and black pepper to taste.
  3. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  4. Transfer the rolled-out dough to a baking sheet or pizza stone.
  5. Spread the coconut curry sauce evenly over the pizza dough, leaving a small border around the edges.
  6. Distribute the shredded chicken evenly over the sauce, followed by the sliced red onion and shredded mozzarella cheese.
  7. Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and golden, and the crust is cooked through.
  8. Remove the pizza from the oven and let it cool for a couple of minutes before topping with fresh cilantro and chili flakes.
  9. Slice the pizza and serve with lime wedges on the side for squeezing over the top.
