- Coconut milk - 100 ml
- Fish sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Chili paste - 1 teaspoon
- Brioche buns - 2
- Crispy fried noodles - 50 grams
- Fresh cilantro - 20 grams, chopped
- Red onion - 1 small, thinly sliced
- Lime wedges - 2 for serving
Steps
- In a large bowl, combine ground chicken, curry powder, coconut milk, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, and chili paste. Mix until well combined.
- Divide the mixture into two equal portions and shape each into a patty.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-6 minutes on each side, or until fully cooked through and golden brown.
- While the patties are cooking, toast the brioche buns in a separate pan until golden.
- Assemble the burgers by placing a chicken patty on each bun, topped with crispy fried noodles, sliced red onion, and fresh cilantro.
- Serve with lime wedges on the side for an extra burst of flavor.
