  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Chili paste - 1 teaspoon
  • Brioche buns - 2
  • Crispy fried noodles - 50 grams
  • Fresh cilantro - 20 grams, chopped
  • Red onion - 1 small, thinly sliced
  • Lime wedges - 2 for serving

Steps

  1. In a large bowl, combine ground chicken, curry powder, coconut milk, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, and chili paste. Mix until well combined.
  2. Divide the mixture into two equal portions and shape each into a patty.
  3. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-6 minutes on each side, or until fully cooked through and golden brown.
  4. While the patties are cooking, toast the brioche buns in a separate pan until golden.
  5. Assemble the burgers by placing a chicken patty on each bun, topped with crispy fried noodles, sliced red onion, and fresh cilantro.
  6. Serve with lime wedges on the side for an extra burst of flavor.
