Ingredients
- Chickpeas - 200 grams (cooked)
- Red curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Fresh cilantro - 2 tablespoons (chopped)
- Lime juice - 1 tablespoon
- Garlic - 2 cloves (minced)
- Ginger - 1 tablespoon (grated)
- Breadcrumbs - 50 grams
- Soy sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Cabbage - 100 grams (shredded)
- Carrot - 50 grams (julienned)
- Cucumber - 50 grams (sliced)
- Vegetable oil - for frying
- Chili flakes - to taste
Steps
- In a large bowl, mash the cooked chickpeas using a fork or potato masher until mostly smooth.
- Add the red curry paste, coconut milk, minced garlic, grated ginger, chopped cilantro, lime juice, soy sauce, salt, black pepper, and breadcrumbs to the mashed chickpeas. Mix until well combined.
- Form the mixture into two patties and chill them in the refrigerator for 10 minutes to firm up.
- Heat vegetable oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, prepare the pickled vegetables by mixing shredded cabbage, julienned carrot, and sliced cucumber in a bowl. Drizzle with lime juice and sprinkle with chili flakes. Toss well.
- To assemble the burger, place each patty on a burger bun, top with the pickled vegetable mixture, and add any extra chili flakes for spice.
