- Egg noodles - 150 grams
- Coconut milk - 200 ml
- Vegetable broth - 300 ml
- Red curry paste - 2 tablespoons
- Tofu (cubed) - 150 grams
- Carrot (julienned) - 1 medium
- Red onion (sliced) - 1 small
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Lime juice - 1 tablespoon
- Fresh cilantro (chopped) - 2 tablespoons
- Green onions (sliced) - 2 tablespoons
- Chili flakes - to taste
- Vegetable oil - 1 tablespoon
- Salt - to taste
Steps
- Cook the egg noodles according to package instructions, then drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced red onion, garlic, and ginger, and sauté until fragrant.
- Stir in the red curry paste and cook for another minute until well combined.
- Add the cubed tofu and julienned carrot, stirring to coat with the curry paste.
- Pour in the vegetable broth and coconut milk, bringing the mixture to a gentle simmer. Allow it to cook for about 10 minutes.
- Season with lime juice and salt to taste.
- In a separate pan, fry a handful of additional egg noodles in oil until crispy, then remove and drain on paper towels.
- To serve, place a portion of cooked noodles in each bowl, ladle the hot curry soup over the noodles, and top with crispy noodles, cilantro, green onions, and chili flakes as desired.
