  • Rice vermicelli noodles - 100 grams
  • Coconut milk - 400 ml
  • Chicken breast, thinly sliced - 200 grams
  • Red curry paste - 2 tablespoons
  • Chicken stock - 500 ml
  • Fish sauce - 2 teaspoons
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Green onions, chopped - 2 tablespoons
  • Bean sprouts - 50 grams
  • Lime wedges - 2, for serving

Steps

  1. In a pot, bring the chicken stock to a gentle boil over medium heat.
  2. Add the red curry paste and stir until well combined with the stock.
  3. Add the sliced chicken breast to the pot and cook for about 5 minutes, or until the chicken is cooked through.
  4. Pour in the coconut milk and stir to incorporate, then add the fish sauce, lime juice, and sugar. Let it simmer for another 5 minutes.
  5. While the soup is simmering, cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  6. To serve, place a portion of the cooked noodles in each bowl and ladle the hot soup over the noodles.
  7. Garnish with chopped cilantro, green onions, and bean sprouts. Serve with lime wedges on the side.
