- Chicken breast, thinly sliced - 200 grams
- Red curry paste - 2 tablespoons
- Chicken stock - 500 ml
- Fish sauce - 2 teaspoons
- Lime juice - 1 tablespoon
- Sugar - 1 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Green onions, chopped - 2 tablespoons
- Bean sprouts - 50 grams
- Lime wedges - 2, for serving
Steps
- In a pot, bring the chicken stock to a gentle boil over medium heat.
- Add the red curry paste and stir until well combined with the stock.
- Add the sliced chicken breast to the pot and cook for about 5 minutes, or until the chicken is cooked through.
- Pour in the coconut milk and stir to incorporate, then add the fish sauce, lime juice, and sugar. Let it simmer for another 5 minutes.
- While the soup is simmering, cook the rice vermicelli noodles according to package instructions, then drain and set aside.
- To serve, place a portion of the cooked noodles in each bowl and ladle the hot soup over the noodles.
- Garnish with chopped cilantro, green onions, and bean sprouts. Serve with lime wedges on the side.
