Ingredients

  • Jasmine rice - 1 cup (200g, cooked and cooled)
  • Pineapple - 1 cup (150g, diced)
  • Carrot - 1 medium (70g, finely chopped)
  • Green peas - 1/2 cup (75g, frozen or fresh)
  • Red bell pepper - 1/2 medium (75g, diced)
  • Green onion - 2 stalks (30g, chopped)
  • Garlic - 2 cloves (6g, minced)
  • Soy sauce - 2 tablespoons (30ml)
  • Coconut oil - 2 tablespoons (30ml)
  • Turmeric powder - 1/2 teaspoon (1g)
  • Black pepper - 1/4 teaspoon (1g)
  • Fresh cilantro - 2 tablespoons (5g, chopped) for garnish
  • Lime - 1 (for serving)

Steps

  1. Cook the jasmine rice according to package instructions and let it cool.
  2. In a large skillet or wok, heat the coconut oil over medium heat.
  3. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Stir in the chopped carrot, red bell pepper, and green peas, and cook for 3-4 minutes until slightly tender.
  5. Add the diced pineapple and cook for another 2 minutes, allowing the flavors to meld.
  6. Push the vegetables to one side of the skillet, and add the cooled jasmine rice to the other side.
  7. Sprinkle the turmeric and black pepper over the rice, then pour the soy sauce over everything.
  8. Mix the rice with the vegetables until well combined and heated through, about 3-4 minutes.
  9. Remove from heat and stir in the chopped green onions.
  10. Serve hot, garnished with fresh cilantro and lime wedges on the side.
