  • Jasmine rice - 150 grams
  • Pineapple - 100 grams, diced
  • Carrot - 50 grams, finely chopped
  • Bell pepper - 50 grams, diced
  • Green peas - 50 grams
  • Spring onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Lime - 1, juiced
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions and set aside to cool.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the chopped carrot and bell pepper to the skillet, cooking for about 3-4 minutes until they begin to soften.
  4. Stir in the green peas and cooked rice, breaking up any clumps. Mix thoroughly, allowing the rice to heat through for about 2 minutes.
  5. Add the diced pineapple and soy sauce, mixing gently to combine all ingredients. Cook for another 3-4 minutes until heated through and slightly caramelized.
  6. Remove from heat, and stir in lime juice, chopped spring onion, cilantro, salt, and black pepper to taste.
  7. Serve warm, garnished with additional cilantro if desired.
