- Carrot - 50 grams, finely chopped
- Bell pepper - 50 grams, diced
- Green peas - 50 grams
- Spring onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Lime - 1, juiced
- Cilantro - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions and set aside to cool.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the chopped carrot and bell pepper to the skillet, cooking for about 3-4 minutes until they begin to soften.
- Stir in the green peas and cooked rice, breaking up any clumps. Mix thoroughly, allowing the rice to heat through for about 2 minutes.
- Add the diced pineapple and soy sauce, mixing gently to combine all ingredients. Cook for another 3-4 minutes until heated through and slightly caramelized.
- Remove from heat, and stir in lime juice, chopped spring onion, cilantro, salt, and black pepper to taste.
- Serve warm, garnished with additional cilantro if desired.
