  • Jasmine rice - 150 grams
  • Crab meat (fresh or canned) - 100 grams
  • Egg - 1 large
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Peas (fresh or frozen) - 50 grams
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Lime - 1, juiced
  • Vegetable oil - 2 tablespoons
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. Drain the rice and cook it according to package instructions, or steam it until fluffy (approximately 15 minutes).
  3. In a large skillet or wok, heat the vegetable oil over medium heat and sauté the minced garlic until fragrant, about 30 seconds.
  4. Add the diced carrot and peas, and stir-fry for about 2-3 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet, crack the egg into the empty space, and scramble it until fully cooked.
  6. Add the cooked rice to the skillet, along with the crab meat, soy sauce, fish sauce, lime juice, and chopped green onions.
  7. Stir everything together, ensuring the rice is heated through and the flavors are well combined, about 3-5 minutes.
  8. Season with salt and pepper to taste, and garnish with chopped cilantro before serving.
