  • Green beans - 100 grams, chopped
  • Eggs - 2, beaten
  • Nam Prik Pao (Thai roasted chili paste) - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh basil leaves - a handful, chopped
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add minced garlic and sliced shallots, sautéing until fragrant and translucent.
  3. Stir in the diced red bell pepper, carrot, and green beans, cooking for about 5 minutes until slightly tender.
  4. Push the vegetables to one side of the pan and pour the beaten eggs into the empty side, scrambling until cooked.
  5. Add the cooked rice to the pan, mixing everything together.
  6. Stir in the Nam Prik Pao and soy sauce, ensuring all ingredients are evenly coated.
  7. Add lime juice, chopped basil, and cilantro, mixing well.
  8. Season with salt and pepper to taste before serving.
