  • Cilantro - a handful, chopped (for garnish)

Steps

  1. Begin by cooking the jasmine rice according to the package instructions. Once cooked, let it cool slightly.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the diced carrot and bell pepper to the skillet and stir-fry for about 3-4 minutes until they begin to soften.
  4. Push the vegetables to one side of the skillet, crack the eggs into the empty space, and scramble them until fully cooked.
  5. Add the crab meat to the skillet, followed by the cooked rice. Stir everything together until well combined.
  6. Pour in the soy sauce, oyster sauce, fish sauce, and black pepper. Stir-fry for another 3-4 minutes until the rice is heated through and the flavors are well incorporated.
  7. Remove from heat and stir in the chopped green onions. Garnish with cilantro before serving.
