- Shallots, thinly sliced - 2 medium
- Carrot, julienned - 1 medium
- Bell pepper, thinly sliced - 1 medium (any color)
- Green beans, chopped - 100 grams
- Eggs - 2 large
- Soy sauce (gluten-free) - 2 tablespoons
- Oyster sauce (gluten-free) - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Cilantro, chopped - 2 tablespoons
- Lime wedges - for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions. Ideally, prepare the rice a day in advance and refrigerate for better texture.
- Heat the vegetable oil in a large non-stick pan or wok over medium-high heat. Add the minced garlic and sliced shallots, stirring until fragrant, about 1 minute.
- Add the julienned carrot, sliced bell pepper, and chopped green beans to the pan. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
- Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooked jasmine rice to the pan, followed by the gluten-free soy sauce, oyster sauce, and black pepper. Stir-fry everything together for another 3-4 minutes until well combined and heated through.
- Remove from heat, stir in the chopped cilantro, and serve hot with lime wedges on the side.
