Ingredients

  • Jasmine rice - 150 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Shallots, thinly sliced - 2 medium
  • Carrot, julienned - 1 medium
  • Bell pepper, thinly sliced - 1 medium (any color)
  • Green beans, chopped - 100 grams
  • Eggs - 2 large
  • Soy sauce (gluten-free) - 2 tablespoons
  • Oyster sauce (gluten-free) - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Lime wedges - for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions. Ideally, prepare the rice a day in advance and refrigerate for better texture.
  2. Heat the vegetable oil in a large non-stick pan or wok over medium-high heat. Add the minced garlic and sliced shallots, stirring until fragrant, about 1 minute.
  3. Add the julienned carrot, sliced bell pepper, and chopped green beans to the pan. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
  4. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
  5. Add the cooked jasmine rice to the pan, followed by the gluten-free soy sauce, oyster sauce, and black pepper. Stir-fry everything together for another 3-4 minutes until well combined and heated through.
  6. Remove from heat, stir in the chopped cilantro, and serve hot with lime wedges on the side.
