  • Fish sauce - 1 tablespoon
  • Oyster sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Red chili flakes - 1/2 teaspoon (optional)
  • Fresh cilantro - for garnish (optional)

Steps

  1. Begin by ricing the cauliflower using a food processor or grater. Set aside.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add minced garlic and sliced shallots, sautéing until fragrant.
  3. Add the sliced pork tenderloin to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Push the pork to one side of the skillet and add the remaining tablespoon of oil. Crack the eggs into the skillet and scramble until cooked.
  5. Mix the pork and scrambled eggs together, then add the riced cauliflower to the skillet. Stir well to combine.
  6. Pour in the soy sauce, fish sauce, and oyster sauce, stirring until the cauliflower is evenly coated. Cook for an additional 5-7 minutes until the cauliflower is tender.
  7. Season with black pepper and red chili flakes, if using. Stir in the chopped green onions.
