- Fish sauce - 1 tablespoon
- Oyster sauce - 1 tablespoon

Steps
- Begin by ricing the cauliflower using a food processor or grater. Set aside.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add minced garlic and sliced shallots, sautéing until fragrant.
- Add the sliced pork tenderloin to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Push the pork to one side of the skillet and add the remaining tablespoon of oil. Crack the eggs into the skillet and scramble until cooked.
- Mix the pork and scrambled eggs together, then add the riced cauliflower to the skillet. Stir well to combine.
- Pour in the soy sauce, fish sauce, and oyster sauce, stirring until the cauliflower is evenly coated. Cook for an additional 5-7 minutes until the cauliflower is tender.
- Season with black pepper and red chili flakes, if using. Stir in the chopped green onions.
- Remove from heat and garnish with fresh cilantro if desired. Serve hot.
