- Jasmine rice - 150 grams
- Pork tenderloin - 200 grams, thinly sliced
- Eggs - 2 large
- Garlic - 3 cloves, minced
- Shallots - 2, sliced
- Green onions - 2 stalks, chopped
- Thai basil - 30 grams, roughly chopped
- Soy sauce - 30 ml
- Oyster sauce - 15 ml
- Fish sauce - 10 ml
- Sugar - 5 grams
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the jasmine rice according to package instructions, then let it cool slightly.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add minced garlic and sliced shallots, stir-frying until fragrant.
- Add the sliced pork tenderloin to the skillet, cooking until browned and cooked through, about 5-7 minutes.
- Push the pork to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked, then mix with the pork.
- Stir in the cooked rice, breaking up any clumps, and add the soy sauce, oyster sauce, fish sauce, and sugar. Mix well to combine.
- Add the chopped green onions and Thai basil, stirring until the basil is wilted. Season with salt and black pepper to taste.
- Serve hot, garnished with additional Thai basil if desired.
