Ingredients

  • Jasmine rice - 150 grams
  • Pork tenderloin - 200 grams, thinly sliced
  • Eggs - 2 large
  • Garlic - 3 cloves, minced
  • Shallots - 2, sliced
  • Green onions - 2 stalks, chopped
  • Thai basil - 30 grams, roughly chopped
  • Soy sauce - 30 ml
  • Oyster sauce - 15 ml
  • Fish sauce - 10 ml
  • Sugar - 5 grams
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the jasmine rice according to package instructions, then let it cool slightly.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add minced garlic and sliced shallots, stir-frying until fragrant.
  3. Add the sliced pork tenderloin to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  4. Push the pork to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked, then mix with the pork.
  5. Stir in the cooked rice, breaking up any clumps, and add the soy sauce, oyster sauce, fish sauce, and sugar. Mix well to combine.
  6. Add the chopped green onions and Thai basil, stirring until the basil is wilted. Season with salt and black pepper to taste.
  7. Serve hot, garnished with additional Thai basil if desired.
