Ingredients

  • Cauliflower - 400 grams
  • Chicken breast, diced - 200 grams
  • Eggs - 2 large
  • Green onions, chopped - 3 stalks
  • Red bell pepper, diced - 1 medium
  • Garlic, minced - 3 cloves
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cilantro, chopped - 2 tablespoons
  • Lime, cut into wedges - 1
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Remove the leaves and stem from the cauliflower, then pulse the florets in a food processor until they resemble rice grains.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the diced chicken breast to the skillet and cook until no longer pink, about 5-7 minutes. Season with salt and pepper to taste.
  4. Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked, then mix them with the chicken.
  5. Add the cauliflower rice, red bell pepper, green onions, soy sauce, and fish sauce to the skillet. Stir-fry for about 5-7 minutes until the cauliflower is tender but still has some crunch.
  6. Remove from heat and stir in the chopped cilantro. Serve hot with lime wedges on the side for squeezing over the dish.
