Ingredients

  • Cauliflower rice - 400 grams
  • White fish fillets (such as tilapia or cod) - 200 grams, cut into bite-sized pieces
  • Eggs - 2, beaten
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Green onions - 2, chopped
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1 small, julienned
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro - a handful, chopped
  • Olive oil - 2 tablespoons
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat.
  2. Add minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Add the fish pieces to the pan and cook until they are opaque and flaky, about 5-7 minutes. Remove the fish and set aside.
  4. In the same skillet, add another tablespoon of olive oil. Add the cauliflower rice, stirring well to combine with the garlic and shallots.
  5. Add the sliced bell pepper and julienned carrot to the cauliflower rice, cooking for about 5 minutes until the vegetables are tender.
  6. Push the cauliflower rice mixture to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
  7. Mix the scrambled eggs into the cauliflower rice, then add the cooked fish back to the skillet.
  8. Pour in the soy sauce, fish sauce, and lime juice, stirring everything together until well combined.
  9. Add chopped green onions and cilantro at the end, mixing them in gently.
  10. Season with black pepper to taste and serve hot.
