- Shallots - 2, finely chopped
- Green onions - 2, chopped
- Red bell pepper - 1, thinly sliced
- Carrot - 1 small, julienned
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Cilantro - a handful, chopped
- Olive oil - 2 tablespoons
- Black pepper - to taste
Steps
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat.
- Add minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the fish pieces to the pan and cook until they are opaque and flaky, about 5-7 minutes. Remove the fish and set aside.
- In the same skillet, add another tablespoon of olive oil. Add the cauliflower rice, stirring well to combine with the garlic and shallots.
- Add the sliced bell pepper and julienned carrot to the cauliflower rice, cooking for about 5 minutes until the vegetables are tender.
- Push the cauliflower rice mixture to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
- Mix the scrambled eggs into the cauliflower rice, then add the cooked fish back to the skillet.
- Pour in the soy sauce, fish sauce, and lime juice, stirring everything together until well combined.
- Add chopped green onions and cilantro at the end, mixing them in gently.
- Season with black pepper to taste and serve hot.
